Creamy Mushroom and White Bean Soup Recipe

Enjoy a comforting Creamy Mushroom and White Bean Soup with earthy mushrooms, hearty white beans, and a luscious creamy texture.

Soup nights are always a good thing, especially when it’s cold outside.  This Creamy Mushroom and White Bean Soup Recipe is made with only a handful of ingredients and it’s done in less than 20 minutes.

I used Cremini mushrooms in this Soup Recipe because they have a heartiness that creates a substantial soup.  Canned white beans are added after being drained and rinsed  — before they hit the pot for an easy addition.  The soup simmers for 15 minutes and then a quick semi-puree (leave a little texture) before ladling into bowls.

I just love the rustic qualities of this Creamy Mushroom and White Bean Soup — it’s so simple, yet delicious and easy to make during the week when time is tight.

  • always drain and rinse beans before adding to soup

To Prepare:

  1. In a large stock pot, add 1 tablespoon oil and place over medium heat.  Add onion and stir.  Cook for 3 minutes.
  2. Add salt, pepper and dried thyme (I like to rub dried spices between palms to open up flavor).  Add mushroom and stir.
  3. Cook for 4 minutes until slightly softened.
  4. Add beans and stock, stir.  Reduce heat to low and cover with lid.
  5. Simmer for 15 minutes.  Remove lid and partially puree, leaving some texture.
  6. Ladle into bowls and top with sour cream, if desired.  Enjoy!

This Creamy Mushroom and White Bean Soup is so easy — it will be done before the table is set!
