Soup nights are always a good thing, especially when it’s cold outside. This Creamy Mushroom and White Bean Soup Recipe is made with only a handful of ingredients and it’s done in less than 20 minutes.
I used Cremini mushrooms in this Soup Recipe because they have a heartiness that creates a substantial soup. Canned white beans are added after being drained and rinsed — before they hit the pot for an easy addition. The soup simmers for 15 minutes and then a quick semi-puree (leave a little texture) before ladling into bowls.

Ingredients
1 white onion, diced
2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon dried thyme, or fresh thyme leaves
28 ounces canned cannellini beans, drained and rinsed
3 cups chicken or vegetable broth
oil for cooking
sour cream, optional
*Tips
- always drain and rinse beans before adding to soup
- you can substitute water for stock, soup may need a bit more salt
- dried thyme can be substituted for dried oregano (just use 2 teaspoons)
- can freeze leftovers for another meal

To Prepare:
- In a large stock pot, add 1 tablespoon oil and place over medium heat. Add onion and stir. Cook for 3 minutes.
- Add salt, pepper and dried thyme (I like to rub dried spices between palms to open up flavor). Add mushroom and stir.
- Cook for 4 minutes until slightly softened.
- Add beans and stock, stir. Reduce heat to low and cover with lid.
- Simmer for 15 minutes. Remove lid and partially puree, leaving some texture.
- Ladle into bowls and top with sour cream, if desired. Enjoy!
