Charred Broccoli with Goat Cheese & Pine Nuts

Broccoli is a food that contains almost all the vitamins and minerals you need in a day, except B12 and it has more vitamin C than an orange, but that’s not why it is so delicious.  Broccoli is versatile and you can eat it raw, roasted, steamed or charred in a skillet on the stove top, like in this recipe.  I think it is the perfect food and you can doll it up with tons of ingredients to create a special dish that everyone will enjoy.

Charred Broccoli with Goat Cheese & Pine Nuts is super simple to prepare in an iron skillet.  The deep green vegetable gets slightly blackened on the edges and the broccoli sweetens as it cook.  The goat cheese adds an earthiness with a slight tang and the pine nuts are great for crunch.

This dish is great during the week or especially at the holidays when oven space is limited.  The entire thing can be done in 5 minutes or less, so you can prepare it at the last minute and serve immediately.

Ingredients

3 cups broccoli florets

2 lemons

1/3 cup goat cheese, about 2 ounces

1/4 cup toasted pine nuts

vegetable oil

salt & pepper

(Serves 6)

To Prepare:

1. In an iron skillet over medium high heat, add 2 teaspoons vegetable oil.  After 2 minutes, add the broccoli and toss to coat.  Let broccoli cook without stirring for 2 minutes.  Stir and cook again for 1 minute.

2.  Cut 1 lemon in half and squeeze the juice over the top of broccoli, toss to coat.  Continue to cook for 1-2 minutes, or until crisp tender.  Remove from heat.

3.  Crumble goat cheese and top with pine nuts.  Slice the other lemon into wedges and serve alongside the broccoli. Enjoy!
