Brie and Avocado Grilled Cheese Recipe

Enjoy the perfect blend of creamy brie and buttery avocado with this irresistible Grilled Cheese Recipe – a delicious twist on a classic.

Brie and Avocado Grilled Cheese sandwiches sound rather decadent and are incredibly tasty to prepare with less than a handful of ingredients.  Sliced brie and avocado make up the entire grilled cheese and when melted and served warm on toasted bread are over-the-top incredible.

Avocado has a natural buttery taste, yet has flavors of a fruit – slightly sweet, while creamy brie is soft and earthy.  This combination when griddled in a skillet melds beautifully together and becomes an amazing sandwich.

Slice these Brie and Avocado Grilled Cheese while they are warm, so the cheese oozes gently from the sides.  I like to serve them for a casual meal or cut them in square for a quick and easy appetizer with cocktails.

Ingredients

8 slices sourdough bread

1 wheel brie cheese

2 avocados

4 tablespoons salted butter

*Tips

  • You can substitute Brie for other soft cheese like Camembert or Chevre
  • Rustic whole grain bread would work lovely too
  • Roasted red peppers would make a great addition

(Serves 4-6)

To Prepare:

  1. Butter insides of sourdough bread.
  2. Slice Brie into 1/4 inch thick pieces.  Slice avocados in half and slice.
  3. Heat skillet over medium heat, add 1 tablespoon butter, swirl around pan when melted.
  4. Layer buttered bread with brie and half an avocado.  Top with bread, butter side down and butter outside of bread.
  5. Place butter side down in pan and butter top of bread in skillet.  Cook for 3 minutes with lid over top.
  6. Remove lid and flip. Cover and continue to cook for 3-4 minutes, or until melted and toasty.
  7. Repeat with remaining sandwiches.  Slice and serve warm.  Enjoy!

These Brie and Avocado Grilled Cheese make a great weekend lunch with a side salad served for ladies lunching or at brunch as well.
