Beef & Bean Filling – Recipe!

Who isn’t looking for a quick dinner idea that satisfies your hunger, yet still tastes good?  Ground Beef can be a safe place to start because it cooks up quickly and spices-up so nicely.  Ground or dried herbs should be a staple in your pantry, it’s the only way you can make simple ingredients turn delicious, in my opinion.  There are a handful of spices I always have on hand like; ground cumin, smoked paprika, onion powder and chili powder.  These four spices, plus salt and pepper, can enhance hundreds of recipes and turn boring into fabulous.

Beef and Beans just go together in so many ways.  For instance, you can roll them up into a tortilla for a quick burrito or taco, top them on greens for a hardy taco salad, or pile them up on tortilla chips, or tater tots for a mega comfort-food meal.

The cooking is minimal, especially if you have all your ingredients lined up.  Don’t skimp on the dried herbs, they fuel the beef and beans into a flavor stratosphere, one which you will truly enjoy.

Ingredients

1 small white onion, diced

1 pound ground beef

2 teaspoons ground cumin

2 teaspoons onion powder

2 teaspoons chili powder

1 1/2 teaspoons smoked paprika

14 ounces canned red kidney beans, drained

salt & pepper

olive oil

(Serves 4)

To Prepare:

  1. In a skillet over medium heat, add 1 teaspoon oil and onion.  Saute for 3 minutes and add beef.  Stir to break apart and cook until lightly browned, about 5 minutes.
  2. Add all spices plus, 2 teaspoons salt and 1/2 teaspoon black pepper, stir to combine.
  3. Add beans and turn heat to simmer.  Place lid over top of skillet and cook for 8 minutes.  Remove from heat and spoon onto your favorite food vessel.  Enjoy!
