Unlike most peopole, bananas are not my thing. If you haven’t noticed I don’t have a single banana recipe on my blog until now because they’re not an ingredient I bake with that often. However, I know how much people love bananas and I thought this easy Banana Walnut Bread would be a great place to start.
Making a simple quick bread with browning bananas seems like the right thing to do and obviously a delicious option. A creamy softened banana acts like a flavor agent with all its natural oils and becomes the highlight of this bread. I do love walnuts and the combination of bananas and walnuts has been a hit ever since I can remember. The richness of good walnuts accentuates the crumb and makes it one nice slice of bread to enjoy for either breakfast or at snacktime throughout the day.
You could also toast a thickly sliced piece of this bread and slather salted butter or cream cheese over it, which always seems like a good idea. Either option would be delightful — especially with a good cup of coffee.

Ingredients
8 tablespoons butter, room temperature
3/4 cup granulated sugar
2 large eggs
1 large rip banana or 2 small bananas
1 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chopped walnuts
(Makes 1 Loaf)
To Prepare:
- Preheat oven to 350 degrees and spray with oil or butter 8.5 x 4.5 loaf pan.
- In a stand mixer or large bowl, cream butter and sugar for 3 minutes. Scrape down sides of bowl and add eggs.
- Mix for 2 minutes and add banana and vanilla, then mix until banana is combined. Add flour, baking soda and salt and mix on low until just combined.
- Add walnuts and mix for 30 seconds. Spoon into prepared pan.
- Bake for 50-55 minutes or until a toothpick comes mostly clean. Remove from oven and let cool 30 minutes before loosening with knife and inverting onto a rack.
- Slice and serve with butter. Enjoy!
