Happy 4th of July weekend. As we wind things down and look at the week ahead — mealtime is in full summer mode. Grilling, salads and simple full of flavor recipes are what we are creating here and let’s start the week off with Marinated Chicken, Melon and Heirloom Tomato Salad. It’s a hardy mix of all things delicious and easy to throw together. You can always substitute rotisserie chicken if marinating and grilling chicken isn’t feasible for you. Tuesday is taco night and were definitely going to enjoy Carne Asada, Mushroom and Swiss Chard Tacos. The combination of beef and mushrooms are some of my favorite flavors and when you add Swiss chard or spinach to the mix — it just gets even better.
Wednesday is a great night to utilize the slow cooker and make life easy with my Slow Cooker Ginger Chicken. This Asian infused meal will inspire you to steam some rice and a few veggies for a tasty meal that’s so much better than take-out. On Thursday – it’s pasta night and my Chorizo and Shrimp Angel Hair Pasta is a knock out. The ingredients are simple, but the key to this recipe is buying good chorizo. If you don’t eat meat — the vegan variety can be substituted.
Friday can’t come soon enough and a Cherry Martini during cherry season might be the drink of choice to kick-off the weekend. Saturday’s are for baking a Stone Fruit Cobbler loaded with peaches, plums, apricots or nectarines. Enjoy the beautiful week ahead.
