This is the first official full week of summer and I’d like to start it off on a flavorfully fresh note with Blueberry, Radish and Spinach Salad with Creamy Vinaigrette. It’s light and refreshing with sweet and slightly bitter notes, and a grilled piece of chicken or salmon would taste beautifully with it. Wednesday’s dinner will be my Instant Pot Korean Pork Shoulder with Scallion Sauce – it sounds fancy, but it’s super rustic and easy to put together. Most of the cooking is done for you in that steamy chamber that creates the most tender meat. Thursday evening you can use the leftover pork to create an entirely different meal and this Slow Cooker Pork Sugo is so good ladled over hot pasta, or cheesy grits. You must give it a try.
Friday is a night to chill and what better way to cool off than with these Skinny Jalapeno Margaritas. Invite some friends and make creamy guacamole to pair with these drinks.
