As we head towards summertime, kicking off the week with my Easy Green Chili Cheeseburgers will be a delicious idea. The combination of savory beef with tangy chilies create one incredible burger. Tuesday’s are meant for tacos — Turkey Tacos Dorados! These easy to create tacos are made in the oven and topped with fresh tomatoes and shredded lettuce — a real treat on taco night.
Wednesday evening when the air begins to cool and the grill is hot — Grilled Thai Plank Peanut Salmon makes a wonderful meal for al fresco dining at home. The flavors are Asian inspired and heighten any piece of fish, especially salmon. Salads are always a delightful meal when the weather is warm and on Thursday, my Poached Chicken and Strawberry Salad with Honey Poppy Seed Vinaigrette will really be marvelous.
Cherry Gin & Tonics with a cheese board or simple dip will round out the week and bring it to a tasty close and on Saturday, a Mixed Drop Biscuit Cobbler to share with family and friends at a barbecue or outdoor gathering will set the weekend vibes. This dessert is simple to take outdoors and enjoy at picnics and other events. Have a wonderful week ahead.
