Let’s kick off this week with Cinco de Mayo on Monday with some fabulous Rajas Tacos that are fresh, flavorful, and vegetarian. If you haven’t had a Rajas taco — they are loaded with roasted Poblano chilies, corn and just the right spices for a delicious combination in a tortilla. Since we enjoyed tacos yesterday, Tuesday is Sheet Pan Pesto Sausage Pizza night. Super simple to put together, especially if you use store-bought dough.
Wednesday is a simple, yet fabulous meal idea — Chicken Paillard with Zucchini and Mushrooms. I like to serve it family-style on a large platter and put it right on the table. On Thursday, a big hardy salad like this Lobster Cobb makes a marvelous meal. Lobster can be a little pricey, depending upon where you live, so you can substitute jumbo shrimp, but lobster sure tastes great with the thyme vinaigrette.
Friday night needs a little something to go with a good glass of bubbly or a cocktail and these Lemon Ricotta Crostini with Asparagus and Pancetta are a cinch to put together. Saturday’s are for baking Blueberry Corn Muffins for a great start to a nice day. Cornmeal adds texture to a blueberry muffin batter and make these muffins much more interesting. Have a tasty week and don’t forget your mom on Mother’s Day!
