Happy Easter! A day of celebration and family time filled with gatherings big and small. Enjoy shared brunch dishes or an elegant dinner.
I’m going to my son’s house for a two-day party with my daughter-in-law, granddaughter and her family, who create the most delightful Egyptian dishes; like grape leaves and roasted meats, along with traditional pita and feta cheese. Their recipes are fantastic and take many days to prepare — and I feel so blessed to get to share in the festivities.
Monday is a great evening to prepare a Brunswick Stew with beef, chicken, or pork leftovers from Easter. This stew originated in the south and it’s fantastic way to use up those ingredients in the refrigerator. Tuesday’s are usually all about tacos – so I thought I would give you another leftovers recipe with this Leftover Brisket Tacos.
Pasta night is on Wednesday and this platter of Chorizo and Shrimp Angel Hair Pasta is so gorgeous and easy to put together. It’s pretty fun to serve for dinner parties as well. Salmon Stuffed Avocados are what’s on the menu for Thursday and these can be made with smoked, poached or leftover salmon. They also make a great brunch or Mother’s Day meal.
On Friday, it’s Roasted New Potato Wedges with Smoky Aioli, which are amazing served as an appetizer or side dish with a good glass of wine or cocktail. Saturday’s are for baking these Sour Cherries Oatmeal Bars created with good jam and nutty oats. A super simple, yet satisfying treat for the whole family. Enjoy your week ahead and Hoppy Easter!
