A Week At A Time – Meal Ideas

Celebrate community and togetherness with easy-to-create, delicious meals perfect for gatherings or enjoying as leftovers throughout the week.

On Monday, it’s Stove Top White Cheddar and Green Chile Shells that are easy to make and can feed a larger group, especially if you double-up on the ingredients.  They reheat beautifully in the microwave or stove top next day as well.  Tuesday’s are for tacos and these Instant Pot Chipotle Beef Tacos with Chunky Avocado Sauce are so tremendously flavorful and can fill several toasted corn tortillas to feed a crowd.

During the middle of week, it’s supposed to warm up and a big Slow Cooker of Garlic Honey Chicken Thighs served over crunchy cabbage or slaw will really hit the spot without heating up the kitchen.  Thursday can be leftover night using some of that chicken from the previous evening to create Stove Top Pulled Chicken Sandwiches with Asian Flavors.  So, you may want to double-up on the recipe on Wednesday.

Friday evening begs for one of my Meyer Lemon Drops — crisp, citrus, and oh-so delicious.  It may be hard to just stop at one, so I recommend making a pitcher and sharing with some friends.  Saturday’s are for baking a Concha Coconut Bread Pudding that’s super creamy and made with Concha from a local Mexican bakery.  It’s totally irresistible and a springtime favorite.  Hang in there everyone — and share a good meal together.
