Happy Sunday! I hope you are having a nice weekend and are enjoying the first signs of spring. I have a few buds on my grapevines out front and I am just beginning to see my bulbs pop their weary heads with purple flowers. Spring always feels like new beginnings and a great time to create some wonderful meals.
Green Minestrone with Spring Onion & Parsley Pesto is a delicious way to kick off the week. The flavors are vibrant, yet rustic, and really make you feel alive. On Tuesday night, we are making Mexican Turkey Burger Sliders instead of tacos, because they’re packed with fun and easy to put together after a long days work.
Whole-Grain Orzo with Asparagus make a tasty vegetarian meal on Wednesday evening with just a handful of ingredients. The asparagus brighten any day and make this teardrop shaped pasta even better by creating a combination that tastes like springtime. On Thursday, it’s my fabulous Caesar Salad with Crispy Frico — a change from using traditional croutons, which makes it that more crispy and interesting. You can always add roast chicken or cooked shrimp for a boost of protein to the salad.
TGIF and it’s time for a cocktail and a big batch of Molcajete Guacamole. If you don’t have one of these big stone vessels to create the best Guac in town — you should consider getting one. They smash the avocados beautifully, while keeping a bit of texture. Saturday’s are for baking a Coconut Oatmeal Pecan Coffee Cake to enjoy with a big cup of coffee or serve in the afternoon with tea. It’s one of my favorites and I think you will really enjoy it.
