On Monday, it’s St. Paddy’s Day and I have a few meal ideas. From corned beef to Shepherd’s pie — it’s a day of fun and don’t forget to wear your green. Tuesday is usually taco night and these Baja Fish Tacos are some of my favorite. The crispy battered fish aren’t greasy, just crunchy and delicious — it’s the way original recipe fish tacos are made.
Chicken and Avocado Caesar Salad Flatbread is a twist on a traditional salad recipe. You can always buy store-bought dough and bake it up in your oven on a sheet pan and then pile it high with these familiar salad ingredients. Thursday is the first day of spring and I thought a yummy Pea Chutney and Burrata Salad with seasonal ingredients would really be nice. Try and use fresh English peas, but you can’t find them — you can always defrost and drain frozen.
Friday’s are for chilling after a long week, and these Tangerine Martini’s make the perfect ending. Saturday’s are for baking and a slice of this Blueberry Sour Cream Coffee Cake with a hot cup of coffee — sets the stage for a beautiful weekend. Have a tasty week ahead.
