A Week At A Time – Meal Ideas

Happy Sunday and welcome to March! Spring is just a few weeks away, and it’s the perfect time to start creating fresh seasonal meals.

This week, let’s begin with an elegant Crispy Trout with Spring Orzo — it’s beautiful on the plate and easy to put together.  The creamy orzo paired with a crispy skinned trout fillet is just divine.  I think it would make a wonderful weekend brunch dish.  Tuesday are usually taco night, but I’m craving a Mexican Scramble with tortillas served on the side.  It’s another dish that would make a great brunch on the weekend.

Wednesday night is an easy dish — Instant Pot Chicken Sugo.  I just love the flavors and the simplicity of it and the big dollop of ricotta cheese adds to the creaminess and textures.  A spring-like Carrot Coconut Curry Soup is a good meal that begins to draw the season closer to spring.  The sweet and savory components will heighten your palate and remind you of warm days ahead.

TGIF and I’m sure we are all ready for a chill-vibe evening.  A Basil Cucumber Gin & Tonic will hit the spot and isn’t the color amazing.  Maybe a fun drink for St. Paddy’s Day! Saturday’s are for baking Peanut Butter Brookies — a combination of a brownie and a cookie.  Have a lovely week.
