A Week At A Time – Meal Ideas

This longer weekend provides us with more time to cook and enjoy gathering with friends and family.  Monday kicks off with a big pot of Bolognese to enjoy on a chilly evening when you just need something super comforting.  I served it over half spaghetti squash and half pasta to enhance my vegetable intake for the week, but feel free to serve it over anything you choose.  Tuesday means tacos and this Mexican-Style Brown Rice pairs so nicely with any meal, whether it’s tacos or not.  A good piece of seared fish over this rice is pure deliciousness.

On Wednesday, my Provencal Chicken Stew will bring you back to your travels in France.  The savory sauce that the chicken gently braises is one of my favorites — a dish you could almost eat with a spoon.  My One-Pot Mushroom and Wild Rice Soup is the way to end Thursday.  The rustic flavors are super comforting and there is everything you need in a meal in just one bowl.

By Friday, even though the week was shorter for many of us, you are ready to relax with this 7-Layer Board Dip.  It’s a cinch to put together because it’s just about adding some of your favorite pantry ingredients to a serving platter and piling them on one-by-one until done.  I like to serve this board with crunchy tortilla chips and good margaritas.  Saturday’s are for baking these Crunchy Dark Chocolate Raspberry Bars — they’re divine.  Have a tasty week ahead.
