Happy New Year! I hope you had a wonderful holiday and are ready for 2025. This year sparks so many changes and some concerns for our future, but hope and strength will get us through the year with the possibility of more people coming together. My blog will continue to offer new recipes and some oldies, but goodies too — I often repost to remind you of some delicious seasonal options that you shouldn’t miss.
On Monday, it’s mostly veggie day with just a splash of bacon — because isn’t everything better with bacon and this Delicata Squash and Corn Skillet with Bacon is so flavorful and fun. Tuesday is taco night, but I’m making a big pot of beans to go alongside, or maybe I’ll just enjoy these Instant Pot Creamy Black Beans with a side salad. Either way they are wonderful and remember — most of my bean recipes are under Live-Whole Grains. Thai Turkey Noodles are on the menu for Wednesday because they’re quick and super simple to throw together after a long day, not to mention Asian inspired. Thursday night is Skillet Chicken with Broccoli and Peppers — this weeknight meal is still on the healthier side. On Friday night, if you are skipping the cocktail for the month, maybe a Little Green Smoothie will quench that thirst. Saturday’s are for baking my Flourless Carrot Date Cake. It’s super tender and the dates add the perfect amount of sweetness. Have a tasty week ahead.
