Happy Sunday! I hope everyone is subtling into this holiday season nicely and are gathering with friends and family to celebrate this time of the year. I had a girl’s white elephant party Friday night, except we actually swapped gifts that we would want to receive, instead of wrapping up something around the house and calling it a present. The night was fun as always with the ladies and filled with laughter, sharing, lots of hugs and food.
This week’s menu begins with Monday and an Instant Pot Turkey and Black Bean Chili for a Crowd. It’s perfect to enjoy while watching game night, or sharing with friends for any holiday gathering. You can always freeze the leftovers and eat them at a later date for a spur-of-the-moment meal. Tuesday is taco night because it’s one of my favorite foods and these Cauliflower and Caramelized Onion Tacos are veggie packed and so darn delicious. Don’t tell me you don’t love cauliflower after this recipe. On Wednesday, it’s my simple One-Skillet Chicken Stroganoff Rotini. – super fast, fresh and fabulous. Thursday evening is a great night for Slow-Cooker Barbecue Beef. You can pile it high on a Kaiser roll or spoon it over cheesy polenta or grits — either way it’s so good. Friday night is for making one of these 4 Holiday Cocktail Recipes at your home to sip with Santa and his elves. Saturday’s are for baking this most amazing Salted Chocolate Thumbprint Cookies for the cookie swap this weekend or just to give away as gifts. Have a wonderful week ahead.
