A Week At A Time – Meal Ideas!

As we wind down our turkey day weekend and the Christmas holiday season starts to pick up many parties, gatherings and festive food becomes the highlight of the season.

This week is filled with easy to prepare dishes that balance our busy schedules and on Monday — Turkey Meatballs with Creamy Arugula Pesto Sauce is a skillet meal that incorporates simple ingredients into one delightful dish.  Arugula with peppery notes adds such a nice flavor to classic pesto.  Tuesday night deserves something hardy like an Instant Pot Mexican Pork Stew with tastes of the southwest.  It’s an easy prep and cooks up in no time — one big bowl fills the chill of the evening.  Curry Chicken and Chickpea Stew is what’s on the menu for Wednesday.  Chicken thighs surrounded in an earthy savory sauce served over hot steamy rice just feels right this time of the year.  By Thursday, it’s a great night for pizza — Roasted Broccoli, Cherry Tomato and Capicola Pizza.  If you can’t get your hands on capicola — a good sliced salami will do the trick.  Friday means cocktail time and my favorite drink during the wintertime is a Manhattan — smooth and warming with all the right notes.  Saturday’s are for baking this Easy Brownie Tart.  It’s a fudgy treat that simple to put together.  Have a cheerful week.
