It’s Thanksgiving week and like many of you, I have some holiday menu planning to do however, we still need to eat before and after turkey day, so here are some recipes that are easy and delicious.
We start the week off with a Slow-Cooker Vietnamese Style Pot Roast because it’s super easy to put together and the flavors are Asian inspired — something non-traditional from what we will be eating on Thursday. Tuesday is a good time to utilize those beef leftovers and create Shredded Beef & Mashed Potato Taquitos with Chunky Guacamole. You can also prepare a larger portion of mashed potatoes and save the remainder for Thanksgiving day because they reheat so nicely. Salmon Piccata is a quick meal to make on Thanksgiving eve. A quick pan sauce with lemon, capers and butter made with pantry items can be easily whisked in a skillet and ladled over seared fish. Turkey Day came fast this year and if you haven’t quite put together some delicious side dishes here are some ideas. Black Friday is all about shopping and leftovers from your Thanksgiving meal. I definitely like to transform my holiday food and here are some delightful ways to enjoy it in different recipes. Saturday is going to be much more chill than usual — enjoying family and friends and a big pot of Turkey and Wild Rice Soup. Have a festive holiday week!
