Happy Sunday and boy is it cold outside. Soups, stews, and one-pot meals that cook low and slow sound so delicious right now, and I’m filling this week’s menu with these types of recipes.
I love a good hardy soup and Monday seems like the perfect evening for Chicken Sausage, Cabbage and Pasta Soup. This soup is loaded with chunks of chicken, strings of shredded cabbage in a brothy liquid that’s flecked with al dente noodles. Tuesday evening is usually taco night, but tonight it’s my Mini Tamale Pies for dinner. They are made with leftover chili or beans, and topped with a cornbread crust. You could even use store-bought chili that they sell at the deli counter – skip the canned stuff. They’re so quick and tasty, and the leftovers can be wrapped and enjoyed the next day for lunch. On Wednesday, let’s take a trip to northwest Africa and create Slow Cooker Moroccan Beef and Potato Stew. It’s delicious and hardy with all the right warming spices to create one silky stew. By Thursday, we can certainly feel the weekend upon us and let’s dive into a big bowl of Chicken Sausage Mushroom Orzo for something extra comforting and a cinch to put together. Friday night and it’s time of a cocktail — a Classic Negroni. One sip and you’ll feel the week fall away. Saturday’s are for baking — Pumpkin Nutella Bars. These little squares are filled with the classic hazelnut spread and topped with a crumb crust for extra fun. Have a wonderful week and stay warm.
