Happy Sunday and I hope most of you enjoyed an additional hour of sleep this morning. It’s a beautiful day after having just a dusting of rain yesterday that cleared the skies, and provided a wee bit of moisture to all that’s around us. I’m in the mood to cook and bake because these type of temperatures make food so much more fun to prepare and enjoy.
On Monday — a big pot of Chicken Vegetable Soup sounds so good for dinner and I’ll have leftovers to enjoy for lunch, or another meal most of the week. Tuesdays are taco nights and these Rajas Tacos are loaded with roasted poblanos and sweet corn in a mildly creamy sauce — food I adore. By Wednesday, it’s Slow-Cooker Ginger Turkey and Peppers for a meal that’s easy to prepare and starts to set the mood for the upcoming holiday season. I’ll probably be craving a burger by Thursday and these Chili-Cheese Burgers remind me of college and heading down to Tommy’s in Westwood for a late night snack. If you haven’t had a chance to enjoy these chili-filled burgers, I strongly suggest you make them at home and indulge. Friday night can’t come quickly enough for many of us and a Hot Crab Dip makes the perfect ending to a busy week. It’s also lovely with a crisp glass of white wine or bubbles, or your favorite cocktail. Saturday’s are for baking and I think it’s time for a loaf of my Chocolate and Toffee Chip Pumpkin Bread. It’s super tender and flecked with all your favorite things. Have a wonderful week.
