A Week At A Time – Meal Ideas!

Happy Sunday!  Many have been already celebrating Halloween this weekend and I hope you’re having a spooktacular time.  However, I’m actually waiting for trick-or-treating with my granddaughter on Thursday — October 31st to indulge in some fun with the family.

This week is going to be quite busy with all the activities and I’m starting Monday with an simple Instant Pot Mushroom and Wild Rice Soup for a heart-warming meal in minutes.  I love the earthy flavors in this soup and feel such comfort in a warm bowl.  Tuesday usually means tacos, however a good bowl of Spicy Adzuki Beans is what I’m craving and you can wrap them in a tortilla, add them over rice or pasta, or just dig-into a big bowl and enjoy.  Wednesday is a great evening for soup and my Chicken, Leek and Brown Rice Soup is a cinch to prepare and curbs your cravings for something warm and satisfying.  If you’re looking for something quick and super tasting for Thursday — it’s my Pasta Puttanesca with Salami.  It’s loaded with Italian charm like tomatoes and olives and the salami adds savory notes that every good bowl of pasta requires.  Friday night means it’s time to relax and unwind with superb Manhattan.  It’s my favorite drink during the fall and winter months.  Saturday’s are for baking a Rustic Apple Tart — pure perfection during apple season.  Enjoy your week ahead.
