Happy Sunday! I hope you are enjoying your weekend and if you haven’t noticed, the weather is just starting to feel like fall, even though we officially have one more week of summer. Saying goodbye to summer means so many things to me like trimming back those summer tomato vines and fresh herbs from my upright garden beds, possibly rotating some tank tops and shorts into the back of my drawers, and loading up on fresh summer recipes all week long.
On Monday, I want to really enjoy another big bowl of Panzanella Salad with Peaches, Tomatoes and Basil before they’re gone. You can use up some older bread from your cupboard and toast it golden brown, before adding it to the juicy fruit — it softens beautifully when tossed together. Tuesday is taco night and these Rajas Tacos are made with fresh poblanos that have been abundant at farmer’s markets lately. Poblanos aren’t too spicy, but have a earthiness that after roasting, taste so delicious, especially warmed with cheeses and rolled up in a soft corn tortilla. It’s one of my favorite things. On Wednesday, I want to create another summer savory tart on store-bought puff pastry and this Sweet Corn, Ricotta and Cherry Tomato version is delightful and is easy to put together. You can make this recipe in the fall and winter months with frozen corn and cherry tomatoes from the grocers, but it’s just not the same, so give it a whirl this week.
On Thursday, I want to make a big batch of my Tahini Green Goddess Dressing using some fresh herbs from my garden and savor it as long as it lasts. I like to spoon it over a fresh bowl of greens, use it as a dip with carrots, radishes and raw zucchini, or spoon it over grilled shrimp or chicken — it has so many delicious uses. Friday night is usually a great evening for a cocktail or glass of wine and these Fried Green Tomato, Lemon Ricotta Toasts will surely pair nicely with either. Use up those green tomatos that are still slightly firm and need a tasty home. Saturday’s are for baking these adorable Petite Peach Cobblers because you might not taste another sweet peach again until next summer. Have a fun summer-filled week.
