A Week At A Time – Meal Ideas!

Happy Sunday!  I hope you’re doing something fun outside today and I’m headed to the beach with my family.  My grandson is in town from North Carolina and we just finished a three-day bender at Disneyland.  I love that place, especially because it feels like home to me.  I was raised in Anaheim and I had the privledge of getting to know Mickey Mouse pretty well growing up.

Today is a warm one, so mealtime should be something light and easy like this Grilled Avocado and Sweet Corn Salad.  I had something similar at the Disney walk the other evening at a restaurant called Paseo and it was delicious.  Tuesday is usually taco night, but this Mexican Steak Salad for Two is so divine and less heavy on a warm summer night.  Wednesday is a simple pasta dish you can make on the stove top to keep things easy — Stove Top White Cheddar and Chile Shells.  Thursday is Grilled Bacon Wrapped Salmon with Peach Salsa — one of my favorites and you can eat the extra salsa with chips during the week.  Friday means cocktail time – Spiked Watermelon Cooler.  It’s cool and refreshing — super easy to put together with friends.  Saturday are for baking this lovely Peach Cobbler with Vanilla Bean Whipped Cream.  Enjoy the stone fruit while it lasts!
