Happy Sunday! I hope y’all are enjoying summer, I know I sure am. I just got back from the Jersey Shore with my “bestie” from high school. It was her family reunion and so I finally got to meet some of her cousins, whom I’ve heard stories about for years. The “Shore,” as they call it there, was hot and humid, but the perfect place for a dip in the Atlantic. We were lucky enough to go boating around the Statue of Liberty and Ellis Island — pretty cool to see it from the water side with Manhattan financial district peering in the distance.
I did eat at a few delicious Italian restaurants while I was there, so I have pasta on the brain. Let’s kick off Monday with Chicken Schwarma Rigatoni — a twist on a middle eastern classic that’s so fun and simple to make. Tuesday is taco night and my Slow-Cooker Pulled Pork Tacos with Barbecue Chipotle Crema will remind you of the flavors of summer. Wednesday evening feels like a good time for salad and my Vegan Caesar doesn’t disappoint. There might not be any anchovies in the dressing, but you won’t miss them — trust me, it’s delicious. Thursday we’re using up some leftovers from taco night and creating — Pulled Pork Grilled Cheese. It’s a no-brainer meal that uses up that savory pork. Friday is cocktail time and my Muddled Nectarine Aperol Spritz is super refreshing and my twist on a classic. Saturday’s are for baking a Mixed Berry Slab Pie to share with friends and family after a wonderful bbq outside. Have a fantastic week.
