Yellow Tomato Sauce – Recipe! (With Video)

Yellow tomatoes are a less popular varietal that are often overlooked.  These tomatoes are delicate in taste and less acidic than red tomatoes, which makes them perfect for creating a luscious sauce that is easy on the palate and compliments food, especially pasta, fish, vegetables and grains.  I created a quick video to show you how easy this Yellow Tomato Sauce is to prepare.

You can buy yellow tomatoes at most farmer’s markets and grocery stores all year round, which is great because you can have fresh sauce available anytime.  This Yellow Tomato Sauce is nice to make on the weekend, when you have an extra half hour to spare and you can store it in the refrigerator for a quick weeknight meal, or use it on a Social Sunday to prepare dinner for the whole family.

You can toss this Yellow Tomato Sauce in a casserole, along with boiled pasta and dot with mozzarella for a lighter take on Baked Ziti or spoon it over seared halibut fillets or chicken.  If you are in the mood for soup, heat up the sauce and add a touch of cream for a fragrant bowl of deliciousness.

Ingredients

1 1/2 pounds yellow tomatoes

2 scallions

1 clove garlic

olive oil

(Makes 1 pint)

To Prepare:

1. Mince scallions and garlic.  Add them to a saucepan with 2 teaspoons of olive oil and cook over medium heat for 1 minute.

2. Dice tomatoes and add them to the pan.  Saute for 2 minutes and add 1/2 cup of water, stir.

3. Place lid slightly a jar and turn heat to low, cook for 30 minutes.

4.  Pour into a food mill and churn.  Enjoy!
