Smoothies are a good thing, especially if you are on the run or feel a little depleted, as I do lately. Spinach is a real immune booster that is loaded with iron that can increase your energy naturally. Occasionally, I buy Sweet Greens juices at the grocery store, farmer’s markets or local juicery. They do tend to get a little pricey, however if you bring them home and add a few other ingredients – it not only increases the volume to two smoothies for the price of one, but with a few additions of protein rich yogurt, and fresh spinach for fiber, it provides a more healthful meal.
If you do own a juicer at home, you can always juice an apple, a few stalks of celery and a half a cucumber, but if not – go with the already juiced Sweet Greens blend. I love the mix of flavors in this green juice because it’s lightly sweet, without being a calorie bomb that will throw your sugar levels into hyperspace. Also, it’s not a bitter veggie knockout, it has nice balance – a little of everything.
This Sweet Greens Spinach & Yogurt Smoothie is as simple as a quick puree in the blender. I love to drink it for breakfast, and sometimes in the afternoon, if I skipped a meal…oops. It would also be great to pack in a thermos and sip at work, or school.
Ingredients
12 ounces sweet greens juice
1 teaspoon grated fresh ginger
2 cups spinach leaves
2/3 cup greek yogurt, non-fat or low-fat
2 handfuls ice cubes
(Makes 2 Smoothies)
- In a blender or vita mix, add juice, ginger, spinach and yogurt. Puree for 1 minute. Add ice and puree until smooth.
- Pour into tall glasses, or in a thermos to drink on the road. Enjoy!
