Puff Pastry is a great product to use to create quick and delicious finger foods for special occasions or for fun any night meals. Puff pastry is sold in any grocery store and can be thawed in minutes on the counter and kept frozen until use. The great thing about puff pastry is that you can fill it with almost anything and it turns out delicious.
Apple bites are quick and easy to prepare and taste like a slice of warm apple pie. Chorizo bites are even easier and create a savory snack or appetizer for any occasion. Make them both in the same mini muffin pan and you have created both a dinner and dessert!
Apple Bites Ingredients
1 pkg. puff pastry – frozen section of store
2 large apples, honey crisps are my favorite, but any will do
4 tablespoons butter
1/3 cup brown sugar
2 teaspoons cinnamon
1 pinch of salt
creme fraiche, optional
amaretti cookies, optional
Chorizo Bite Ingredients
1 package cooked chorizo links
puff pastry from above recipe
Preheat oven to 375 degrees. Dice apples into 1/2 inch chunks and add to a saute pan with butter over medium heat. Add cinnamon and salt and stir. Continue cooking for 5 minutes until slightly soft. Turn off heat and set aside.
Cut chorizo in 2 inch chunks and set aside
Cut puff pastry sheet in half and then in half again to have four quarter sheets. Cut each quarter sheets into four even pieces. Start placing each piece of puff pastry into a mini muffin cup
Spoon apple filling into each cup and save half the cups for chorizo pieces
Next, place chorizo chunks into the other half of cups
Sprinkle crushed amaretti cookies over apple cups only
Place mini muffin pan in oven and bake for 25 minutes or until lightly brown and puffed up
Remove from oven and let rest 5 minutes before placing bites on serving dishes. Dollop creme fraiche on top of apple bites if desired and serve chorizo bites with queso dip or salsa. Enjoy!
