Red, White & Blueberry Tart – Recipe!

In celebration of Memorial Day and remembering those who died for our freedom – create something festive, colorful and fun for dessert.  Berries are available year round, but they are most delightful in the Spring and Summer months.  Using a combination of these lush fruits makes the perfect rustic tart for any celebration, but especially today.

This fruity tart is made with Frangipane or almond cream, which adds a hint of nuttiness to the texture, and wonderful taste.  The combination of flavors of strawberries and blueberries create a lovely pie and you can change out the berries for stone fruits in the upcoming months, for a new creative take on this same recipe.  Happy Memorial Day!

Crust
1 cup flour + more for dusting

1/2 cup toasted almonds

3 tablespoons brown sugar

1/2 teaspoon almond extract

pinch of salt

6 tablespoons cold butter

1/3 cup ice cold water

Frangipane
1 cup blanched almonds

4 tablespoons butter, room temperature

1 egg

1/2 teaspoon almond extract

pinch of salt

Berry Filling
1 pint strawberries

1 pint blueberries

2 tablespoons cornstarch

1/2 cup granulated sugar + more for sprinkling

whipped cream, optional

To Prepare:

1.  In a food processor combine the all dry ingredients for crust, except the butter and water, pulse 5 times.  Then, add cold butter and pulse, until coarse crumbs.  Next, add cold water, until dough just comes together.  Form into disc shape and wrap in plastic and chill for 30 minutes.
2.  To make frangipane – place all ingredients into food proceesor and mix until creamy, about 1 minute.  Place frangipane in a bowl and chill 30 minutes.
3.  Next, toss berries with sugar and cornstarch and set aside.
4.  Flour work surface and roll dough out until 1/4 inch thick.  Place round of dough on cookie sheet and spread frangipane in the center and spread within a inch of edge.  Pour berries over top and fold edges up around perimeter of tart.  Dust with granulated sugar and chill entire tart for 30 minutes.


5.  Preheat oven to 375 and bake for 40-50 minutes until golden brown and fruit is lightly bubbling.  Cool to room temperature and serve with fresh whipped cream.  Enjoy!
