Raspberry Moscow Mules – Recipe!

It’s always cocktail season, but especially more so when we get closer to summer.  Fruity cocktails are always fun because they highlight the freshness of the season and make any traditional drink into something a little more special.

Moscow Mules are a concoction of vodka, lime juice, ginger beer (which is usually non-alcoholic) and served over ice.  I thought I would give this cocktail a little more pizzazz and throw in some freshly muddled raspberries for a my-take on a great soon-to-be-summer drink.  The raspberries give it a sort of light jammy taste, similar to a freshly prepared sorbet.

This recipe makes two cocktails, but if you are having a party – triple the amount and serve them in a punch bowl with an ice ring.  Don’t forget the traditional copper mugs – aren’t they cute!

Ingredients

4 1/4 ounces vodka

juice of 1 lime

6 ounces ginger beer

3 ounces fresh raspberries

(Makes 2 Cocktails)

To Prepare:

1. In a cocktail shaker or beaker (just like science class), add vodka and juice of lime – mine is a lime, I just left it on my tree too long.

2. Add ginger beer and fresh raspberries.  Using a spoon or wooden dowel, press juices out of raspberries.

3.  Fill glasses or copper mugs with ice and strain cocktail over the top.  Serve with straws too – Enjoy!
