My Little Green Smoothie – Recipe!

Happy New Year.  Let the games begin with the January dieting.  This year I’m not starting any name brand diets, I sort of don’t believe in them.  A couple years ago I tried Whole 30 which led me to constantly think about carbohydrates.  I also found myself overeating things I wouldn’t normally indulge on like dates because they were on the “okay” list according to the diet.

However, I do believe in moderation and adding more veggies to my daily regimen.  I am not one to juice for days or starve myself to lose a few pounds, but I am into eating a balanced diet containing whole foods.  Most of us could use a little more fruit and vegetables in our lives and this smoothie is a pretty great way to do just that.

You definitely need a good blender to make a good smoothie and a Vitamix is a great option.  This mixer will puree just about anything, including seeds.  Adding a little fruit and a handful of spinach with just a touch of coconut milk makes a pretty darn good drink and you can always add a scoop of protein to stay satiated longer.

Ingredients

1 tangerine, peeled or small orange

2 tablespoons canned coconut milk, chilled and scooped off top

1 cup spinach leaves

2 dates, seeded

1 scoop protein powder, optional

(Makes 2 Smoothies)

To Prepare:

1.  Add all ingredients to blender.  Add 1/2 cup of water and puree until smooth.

2.  Add a little ice to glasses.  Pour smoothie over ice.

3.  Serve with a fancy straw or umbrella, it tastes better that way.  Enjoy!
