Mocha Crunch Yogurt Pops – Recipe!

Ice Cream just happens to be my favorite food.  I love all kinds of ice cream, but it needs to have great creamy texture and I love crunchy chunks folded inside.  Iced Mochas are very popular, but these calories ridden frappes are not my thing.  I love the flavors of coffee and chocolate, so I thought creating a luscious batch of yogurt pops with similar flavors, would make an incredible treat.

Greek Yogurt is a great base for these Mocha Crunch Yogurt Pops because it is creamy thick and delicious.  Creating the mocha part is quite simple – add a little chocolate syrup and a cup of brewed coffee and stir.  I added a little crushed Heath Bar for some crunchy nuggets and additional toffee goodness.  Sounds pretty good huh?

These pops can be ready to serve within a few hours and make great treats for moms after a long hard day, but are nice to serve to teens who are spending wads of money down at the local Starbucks.  These pops keep in the freezer for at least a month.

Ingredients

2 cups 2% Greek yogurt

1/3 cup chocolate syrup

1 cup brewed coffee, room temperature

2 Heath Bars or 1/2 cup toffee bits

3 ounce paper cups

6 Popsicle sticks

To Prepare:

1. In a large bowl, add the yogurt, chocolate syrup and coffee, whisk until smooth.  Chop up the Health bars and add 1 teaspoon to each cup.

2.  Fold in the rest of the Health Bar to the yogurt mixture.  Fill each cup with the yogurt mixture, about 3/4 full.

3.  Cut foil into 5-inch squares and cover each cup.  Place a stick into the center of each cup and freeze for at least 3 hours.

4.  To unmold – remove the foil and tear the cup away from the pop.  Enjoy!
