Herby Olive Oil Popcorn – Recipe!

Popcorn is one of my most favorite things to snack on, especially when it’s movie night.  My popcorn recipe is not your average bowl of popped and buttered fluffy kernels that you see at the theater or ball games. It’s Herby Olive Oil Popcorn with a little something special added to make it taste phenomenal without all the fat and calories.

This popcorn recipe couldn’t be more simple, starting with air popped popcorn.  I use my air popper machine, but if you don’t have one, you can pop the kernels on the stove top, or toss some kernels in a brown bag and place them in the microwave, and cook for a couple of minutes, until popped. Don’t use the pre-packaged popcorn bags — too many preservatives.  I mixed up my favorite spice blend which includes; nutritional yeast, dried dill, onion powder and salt.  If you haven’t used nutritional yeast before, it mimics the flavors of parmesan cheese.  It super zesty and adds that special something to this popcorn recipe.  I love the fact that I use olive oil, instead of butter, which gives it slight grassy notes — another flavor booster.

This popcorn is so good, it’s hard to stop at just one bowl.  Also, it’s a nice snack to bring along with you to the movies, ball games, theater or packed in lunches.  It’s also fun to serve with cocktails or wine, before a meal with friends.

Ingredients

1/2 cup unpopped popcorn kernels

2 tablespoons olive oil

1 tablespoon nutritional yeast, I prefer Bragg’s

1 teaspoon dried dill

1 teaspoon onion powder

1/2 teaspoon salt

(Serves 2-4)

To Prepare:

1. Pop popcorn kernels in an air popper, on stove, or in a microwave.  Pour into a large bowl.

2. In a small bowl, mix together nutritional yeast, dill, onion powder and salt – set aside.

3. Drizzle popcorn with olive oil and toss to coat and sprinkle with herby mixture.  Serve immediately or store in bags for future snacking. Enjoy!
