Grilled Korean Hot Wings – Recipe!

If you like spicy, like me, one of my favorite ingredients is Gochujang, or Korean chili paste.  This fermented concoction can be added to any sauce or marinade, offering a bit of heat and umami flavors that you won’t find in standard hot sauces.  Gochujang, for most of us, creates a unique taste and it is especially good on hot wings.

Hot Wings are something my family loves to enjoy, but most of the time they are fried and don’t have the right amount of heat.  There is a place in Fullerton, CA called, Heroes, and they make pretty good wings, but driving to Orange County to get my fix is a pretty large commitment.  Heroes wings are crispy and wildly hot – I just can’t stop eating them, or my lips feel like they will burn off.

My recipe is not as nearly as hot and I prepare these wings on the grill, and brush them with my tangy Korean BBQ sauce, including Gochujang.  I hope you fall in love with Gochujang like I have, and add it to some of your favorite recipes.

Ingredients

1/2 cup Gochujang

1/3 cup rice wine vinegar

1/3 cup brown sugar

1/4 cup granulated sugar

1/2 cup soy sauce

1 1/2 pounds chicken wings

grapeseed oil

(Serves 4)

To Prepare:

1.  In a saucepan, add all ingredients, except chicken wings and grapeseed oil.  Turn heat to medium and let sauce cook for 8 minutes, stirring occasionally.  Remove sauce from heat and pour in a bowl.

2.  Preheat grill to medium heat, about 375 degrees.  Toss wings in 3 tablespoons grapeseed oil.  When grill is hot, place wings on grill to cook on first side 4 minutes.

3.  Flip wings over and brush with BBQ sauce.  Cook wings another 4 minutes and flip over again. Brush with another coat of BBQ sauce.   Repeat this step two times, so wings have three coats of BBQ sauce.  Remove wings from grill. Serve on a platter with some extra BBQ sauce.
