Bourbon Pomegranate Soaked Cherries – Recipe!

Tis’ the season to preserve fresh fruit.  If you are anything like me, in the summer I tend to have a lot of extra fruit around my house.  I grow some fruit in my yard, but I also buy fresh fruit at the farmer’s markets and groceries stores because I just love summer fruit.  I tend to purchase way too much and hence my eyes are bigger than my stomach, but I will not through it away – I preserve it for later use.

Cherries are one of my favorites and they tend to be expensive, so I definitely find a way to use them. This recipe for Bourbon Pomegranate Soaked Cherries is perfect on this occasion and they just so happen to make delicious cocktails and desserts in a moments notice.   Stay tuned for more recipes made with Bourbon Pomegranate Soaked Cherries!

Ingredients

6 ounces pomegranate juice

2/3 cup organic sugar

1 vanilla bean, split and halved

1 1/2 cups fresh pitted sour cherries

1/2 cup bourbon

1 – 16 ounce glass jar with lid

(makes 1 jar)

 

To Prepare:

1.  In a small saucepan over medium heat, add the pomegranate juice, sugar and vanilla bean.  Cook until the liquid is simmering and the sugar dissolves, about 3 minutes.

2.  Take your washed and pitted cherries and place them in a clean 16 ounces glass jar.

3.  Pour the hot pomegranate liquid over the cherries in the jar.

4.  Then, pour the bourbon in the jar over the pomegranate liquid.

5.  Don’t forget to place the split vanilla bean in the jar with the soaked cherries.

6.  When room temperature, place the lid on the jar and refrigerate for 2 weeks.  The cherries can be used at this point and will store in the refrigerator for up to 6 months.  Enjoy!
