Blueberry Buckle Protein Smoothie – Recipe!

Blueberry Buckle is a fruit dessert with a coarse crumb topping that “buckles” on top when you bake it. The flavors of fruit and pastry are similar in most fruit cobblers, crisps and pandowdys, but with a slightly different textural experience.  I love a good buckle, especially in the summer, but I know I shouldn’t eat dessert everyday, so I thought I would create a healthier version that has protein to fill me up and make it portable to drink on the run. This recipe for Blueberry Buckle Protein Smoothie is easy to blend up in the morning for a quick breakfast or perfect as a grab and go lunch.

The combination of flaxseed, almonds and hemp protein resemble the flaky pastry in a true buckle, but without all the fat and calories.  I like to use 2% Greek yogurt in this recipe for a rich creamy texture, but you can substitute coconut milk, if you are sensitive to dairy.  I think you will enjoy this delicious smoothie and for me, it satisfies my sweet cravings.

Ingredients

1 cup frozen blueberries

2/3 cup 2% Greek yogurt

1 tablespoon golden flaxseed

2 tablespoons slivered almonds

1 tablespoon hemp protein, or any protein powder

1 tablespoon maple syrup

1/4 cup water

fresh blueberries for garnish, optional

(Makes 1 Smoothie)

To Prepare:

1.  Measure out all your ingredients.

2.  Then, add all the ingredients to a blender and puree until smooth, about 2 minutes.

3.  Pour into your favorite glass or portable cup and enjoy!
