Meatless Mondays are a way to cut back on heavy proteins and eat a little lighter for a day. However, just because the menu doesn’t contain meat, doesn’t mean you have to sacrifice flavor. My husband is a real meat lover and he is my biggest challenge on Meatless nights. However, with most of my recipes, he doesn’t even miss the meat and enjoys another night a week of flavorful cooking.
I think the key to going meatless is eating a variety vegetables and grains. You can combine the two or make a few separate dishes to create a complete meal. Another important factor is adding tons of flavor through fresh herbs, dry spices, nuts or using a splash of vinegar. These condiments are inexpensive and a great resource to add to any meal because they boost flavor and texture in any dish.
